This past month I have been so busy it has been hard to get a post in. We started off spending 4th of July weekend at the lake house and going to the Dave Matthews Band concert at Alpine Valley. This was my first night out since Grace was born. As much as I was worried and missed her it was nice to get out and enjoy myself. Plus Grace was able to spend some time with my husband and the in-laws. The following week we were on vacation, camping in Michigan. This is my favorite time of the whole summer. A week outside, in a tent, with family, haha, it does not sound glamorous and it is most definitely not, but we have a good time swimming in Lake Michigan and cooking dinner over the camp fire. My moms whole family comes out, this year we had about 30 people. Then, we had two weddings in July and one 50th Anniversary party, plus we celebrated my husbands 27th birthday. I finally went part time at work (yay!) more time with Grace, but it has been a little hard because I am loosing part of my salary. However, my husband started working for The Farm on Saturdays at a local farmers market, which should help us out a little for the upcoming holidays. Also, I started planning Grace’s first birthday party, which will be in September. It will be a pink and gold carnival! I am so excited about this party and will do a blog post covering it afterwords.
Today, I am sharing one of my favorite summer dishes, pasta salad. This pasta salad is so easy and everything can be bought at the farmers market and/or Whole Foods. I love getting the pitted Greek olive mix , light balsamic vinaigrette, and penne noodles from Whole Foods. The rest of the ingredients are from the local farmers market. The balsamic vinegar is optional, I always throw it in because the balsamic vinegar from our local farmers market is to die for! I hope you enjoy this fun, fresh summer recipe!
Whole Wheat Penne Pasta Salad
- 1 Box whole wheat penne pasta noodle
- 1 tsp balsamic vinegar (optional)
- 1/2 cup-1 cup pitted Greek olive mix
- 1 cucumber
- 1 red onion
- 1 cup cherry tomatoes, sliced in half
- 1 cup balsamic vinaigrette
- 1/4 cup feta cheese
- Cook pasta according to directions on the box.
- Chop the cucumber, red onion and slice the cherry tomatoes in half. I always slice the cucumber and then cut each slice into four pieces.
- Toss everything in a bowl and enjoy!
