Kolaczki cookies are my families favorite! This recipe has been passed down a few generations and is my absolute favorite cookie recipe! My family uses cream cheese and powdered sugar in the kolaczki’s which makes them so soft. It is a process to make these delicious cookies so patience is key with this recipe, and help is always nice!
I love to mix up the fillings, I have used peach, apricot, my mother-in-laws berry jelly, apple, etc. My dad and I always fight over the cheese filled kolaczki’s, these are a family favorite!
Storing these cookies has always been in issue for me, the recipe makes a ton of cookies, so I would make them if you were going to a family party or some sort of holiday or event. I would make them within 5 days before your desired event and the cream cheese cookies I would highly suggest storing the fridge. Although putting cookies in the fridge will effect the texture to some degree, if you let them thaw out before the party they will stay taste perfect. I always store the cookies in an airtight container otherwise they will dry out, and nobody likes dry cookies! Now, I have tried many different kolaczki cookies because they are my absolute favorite cookie, and this recipe is the best 🙂
1 lb. salted butter
1 lb. cream cheese
4 cups flour
4 tsp. baking powder
2 cups powdered sugar
Mix butter and cheese together, sift in flour. Add sugar and baking powder. Mix with hands or KitchenAid until you have a smooth dough. Next, roll out the dough. Add desired amount of flour to keep the dough from sticking to your surface and to the rolling pin. Once rolled out flat, use a shot glass or small circle cookie cutter to cut out flat circles. Dent the circle with the tip of your finger and fill with your favorite filling.
Bake at 350 for 15 minutes or until lightly golden brown.
Let cool then dust with powdered sugar.
Cream Cheese Filling
8 oz cream cheese
1/4 cup sugar
1/2 tsp Vanilla
Mix all ingredients until smooth. Add to the center of your cookies then bake.
