In the mornings I am always running around like a crazy person, trying to get Grace and myself ready. I am usually in a rush to get out the door, so I like an easy breakfast. Banana bread is my go to option because it is so easy to make and so easy to eat on my way to work.
I LOVE my moms banana bread recipe because she adds applesauce to it which helps keep the bread moist. She sometimes adds 1/2 cup nuts or chocolate chips to her banana bread for a little extra flavor! But I love when she sprinkles a little cinnamon sugar on top before she bakes it.
If you do not know how to make cinnamon sugar its super easy. Just take 1/2 cup sugar with 2 tablespoons ground cinnamon place them into a jar and shake it! Then you can easily store the cinnamon sugar in the jar and put it in the pantry or spice cabinet for future use!
- 1/ cup butter, softened
- 1/4 cup applesauce
- 2 eggs
- 1/2 tsp vanilla
- 2 bananas
- 2 cups flour
- 1/2 cup milk
- 2 tsp baking powder
- 1/4 tsp baking soda
- chopped nuts, optional
- Mix soft butter with sugar.
- Add eggs and flour, mix.
- Slowly add milk then baking powder.
- Mash bananas in a separate bowl with baking soda, then add to mixture.
- Optional, mix in nuts.
- Pour mixture into a loaf ban and sprinkle with a little cinnamon sugar!
- Bake at 375 35-40 minutes until golden brown.
